Summer party season can be downright challenging for people who want to follow healthier habits.
Why?
So many potlucks! So many chips! So many bottomless glasses of wine (or beer or margaritas)!
Truth: we want to eat clean, or drink less, but what are we supposed to do — stay home and eat kale salads all summer?
Of course not. That wouldn't be any fun at all!
So here's what we usually do instead…
We go to the party armed with a bottle of wine for the host, and our best intentions. We also hope there'll be something somewhat healthy to eat, and that we'll be able to be “good” that night.
But then we find ourselves surrounded by the “bad” stuff. One thing leads to another, and then… summer party season is ON.
We repeat this pattern weekend after weekend. And by September, we've gained the Summer Seven.
What's the Summer Seven?
The Summer Seven is 7 pounds that weren't there when the summer started. Kind of like the Freshman 15, but tougher to get rid of since we've been out of college for quite some time. Sigh. That whole metabolism thing.
So here's what I propose: put your party hat on, and take something healthy with you.
Healthier Potlucks: Take a Gorgeous Salad
Here's the game plan: take a delicious and healthy dish to share. That way, you’ll have at least one healthy option to eat at the party, and your health-minded friends will be happy to see something healthy on the table, as well.
Usually, my healthy party pal is a salad.
Today, I'm sharing my recipe for a roasted beet and arugula salad that delivers a hearty, nutritious, and delicious combination of earthy beets, bitter greens, and a slightly sweet, slightly smoky tahini-cumin dressing.
