One Bowl Wonder with Beans and Greens

When it comes to getting healthy meals onto the table, simplicity rules. If dinner becomes complicated, you won’t cook. And if you don’t cook, then there’s a good chance you’ll end up with unhealthy take-out, pizza, or cereal for dinner.

Bowl-style meals are great because you can prepare a simple sauté, and then each family member can customize their meal to taste with an assortment of condiments.

The trick to a great bowl is to add lots of fun garnishes: scallions or chopped onion, nuts or seeds, avocado, and fresh herbs. Plus, a killer sauce is key. For smoky Latin flavor, try my Vegan Chipotle Lava Sauce. Or this delicious Vegan Ranch Dressing. 

I also like to use my plant-based “parmesan” made from seeds and nutritional yeast.

Fun health tip: lentils, chickpeas and other legumes — collectively known as pulses — have been shown to reduce cholesterol, reduce risk of stroke, reduce colon cancer risk, stabilize blood sugar levels, feed “good” gut bacteria, reduce bone loss, and support greater bone mineral density. So enjoy often — ideally daily!

  • vegan ranch dressing

1 serving.

Ingredients

  • a drizzle of avocado oil
  • 2 cloves of garlic, crushed or minced
  • 1 cup of chopped mushrooms
  • a few handfuls of chopped kale (stems removed)
  • 1/2 cup of garbanzo beans, rinsed and drained
  • a drizzle of tamari or soy sauce
  • a drizzle of toasted sesame oil
  • Serve with Vegan Ranch Dressing
  • GARNISH + CONDIMENTS: sliced avocado, leftover roasted vegetables or potato wedges, fresh herbs, hot sauce, etc.

Directions

  • Step 1

    Heat the avocado oil in a pan over medium heat. Add the garlic and sauté for a minute, stirring frequently so the garlic doesn't burn.

  • Step 2

    Next, add the mushrooms. If things start to stick, add a little water to the pan. Sauté until the mushrooms start to brown and become tender.

  • Step 3

    Add the garbanzo beans and kale. Cook until the beans are warmed through and the kale is wilted but still bright green.

  • Step 4

    Remove from heat. Drizzle the tamari and sesame oil over the top.

  • Step 5

    Transfer to a bowl and serve alongside condiments of choice.
