Avocado Toast
Avocado Toast is one of the staples of my online cleanse programs, because it’s satisfying, delicious, and a nice alternative to having smoothies every day.
Start with a perfectly ripe avocado. I like to buy them hard and unripe, and let them ripen on the countertop for a couple of days.
Dress it up with whatever toppings appeal— some arugula, sautéed greens, herbs, sliced tomato, etc. I like to make this with gluten free bread, such as a rustic baguette from New Cascadia in Portland, OR.
Serves 1.
Ingredients
- 2 pieces of gluten free bread
- ½ of a perfectly ripe avocado
- a squeeze of fresh lemon juice
- sea salt for garnish
- freshly ground pepper
- Your choice of toppings, such as sliced cherry tomatoes, arugula, sautéed greens, etc.

Step 1
Toast bread to desired doneness.

Remove pit from avocado and slice down the center. Use your fingers to peel the skin away from the flesh, similar to peeling an orange section. Why? A lot of the nutrients are actually in the flesh located adjacent to the skin, so scooping out the flesh with a spoon could leave behind some of the nutrients.

Step 3
Add the avocado to a small bowl, and squeeze the lemon juice over the top. Mash the avocado with a fork, as if you were making guacamole.

Season with salt and pepper, then spread the avocado mixture onto the toasted bread slices. Garnish with toppings of choice, and serve.
