Creamy Coconut Smoothie
When it comes to smoothies, many of us can fall into a rut — we use the same berries, spinach, protein powder and almond milk day after day.
This “un-green” smoothie still includes veggies — frozen cauliflower — as well as a healthy dose of protein, healthy fats, and creamy deliciousness.

Serves 2
Ingredients
- 2 tablespoons raw, unsalted macadamia nuts (soak these the night before)
- 2 tablespoons raw, unsalted cashews (soak these the night before)
- 1/4 cup dried, unsweetened coconut flakes
- 1 cup coconut water
- 1 cup filtered water
- 1/4 cup hemp seeds
- 1 tablespoon chia seed
- 1 tablespoon ground flaxseed
- 2 teaspoons maca powder
- 1 teaspoon vanilla extract
- 1 cup frozen cauliflower
- 1 1/2 cups frozen banana chunks
- optional: a few ice cubes
- optional boost: 1 teaspoon mushroom powder (reishi, cordyceps or chaga)

Step 1
The night before: place the macadamia nuts and cashews into a small bowl and cover with filtered water. Soak the nuts overnight. This will make them easier to digest, and provide a nice creaminess to the smoothie.

Step 2
In the morning, drain the nuts and discard the soak water. Place the nuts into the blender with the other ingredients, adding frozen fruit and cauliflower last.

Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency.

Serve immediately or store some in fridge for later. Salud!
