Creamy Coconut Smoothie

When it comes to smoothies, many of us can fall into a rut — we use the same berries, spinach, protein powder and almond milk day after day.

This “un-green” smoothie still includes veggies — frozen cauliflower — as well as a healthy dose of protein, healthy fats, and creamy deliciousness.

Serves 2

Ingredients

  • 2 tablespoons raw, unsalted macadamia nuts (soak these the night before)
  • 2 tablespoons raw, unsalted cashews (soak these the night before)
  • 1/4 cup dried, unsweetened coconut flakes
  • 1 cup coconut water
  • 1 cup filtered water
  • 1/4 cup hemp seeds
  • 1 tablespoon chia seed
  • 1 tablespoon ground flaxseed
  • 2 teaspoons maca powder
  • 1 teaspoon vanilla extract
  • 1 cup frozen cauliflower
  • 1 1/2 cups frozen banana chunks
  • optional: a few ice cubes
  • optional boost: 1 teaspoon mushroom powder (reishi, cordyceps or chaga)

Directions

  • Step 1

    The night before: place the macadamia nuts and cashews into a small bowl and cover with filtered water. Soak the nuts overnight. This will make them easier to digest, and provide a nice creaminess to the smoothie.

  • Step 2

    In the morning, drain the nuts and discard the soak water. Place the nuts into the blender with the other ingredients, adding frozen fruit and cauliflower last.

  • Step 3

    Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency.

  • Step 4

    Serve immediately or store some in fridge for later. Salud!
