Matcha Green Tea Latte
Matcha — a green tea comprised of powdered tea leaves — is hot, hot, hot right now! You’ll find it in smoothies, desserts, chia puddings, and, yes, coffee shop lattes.
Matcha may seem like an exotic ingredient, but it’s actually fairly easy to track down these days. Many natural grocery stores carry it, and you’ll also find it in well-stocked tea shops, and online.
Why drink matcha? Green tea is high in antioxidants, and can be easier on the digestive system than coffee.
In addition, making a matcha latte at home means that you can use whatever kind of dairy-free milk you like — I like almond and coconut. Plus, you can control the amount of sweetener you use. I find that most coffee shop matcha lattes are high in sugar. If you get a matcha latte in a coffee shop or restaurant, I recommend ordering it without sweetener — especially since many dairy-free milks are pre-sweetened.

Ingredients
- 1 teaspoon matcha powder
- 4 ounces of hot water (bring to a boil and let it cool down for a few minutes)
- 8 ounces of your favorite unsweetened dairy-free milk; I usually use a 50/50 mix of coconut milk and almond milk
- 1 tablespoon of coconut oil
- 1-2 teaspoons of honey

Step 1
Heat the water in a kettle. Bring to a near boil, or bring it to a boil and remove from heat for a few minutes. Using boiling water for green tea can cause it to taste bitter.

While you're heating the water, gently heat the dairy-free milk in a small saucepan over low heat. Don't boil.

Set the matcha powder in a small bowl. Add about 1 tablespoon of the hot water and whisk gently until a paste forms. Whisk until the paste is smooth and without lumps.

Next, add the rest of the hot water to the bowl, and stir again until the powder is fully incorporated.

Add the brewed tea, as well as the heated dairy-free milk to a blender. Add the coconut oil and honey.

Secure the lid carefully, and blend until smooth. Pour into your favorite mug and enjoy.
