Peachy Green Smoothie
This smoothie is for when you’re stuck in a blueberry-banana-protein-powder rut. Peaches lend a slightly tart quality to the smoothie, which is rounded out by the optional addition of a medjool date or two. I love the how the sliced almonds provide an earthy nutty flavor, as well as a dose of healthy fat — so important for our hair, skin, and heart! Finally, romaine may have a mild flavor, but it’s no lightweight — it’s high in vitamins A and C (good for the skin), and fiber.
Serves 2
Ingredients
- 1 cup of unsweetened almond milk
- 1 cup of filtered water (or coconut water is nice here too)
- 2 cups frozen peaches
- 1 big handful of romaine lettuce, about 2-3 cups
- 1/3 cup of sliced almonds, ideally toasted (see directions)
- optional — 2 tablespoons hemp seed (for protein)
- optional — 2 tablespoons flax seed (for omega-3 fatty acids and cancer-fighting lignans)
- optional — 1-2 medjool dates (for sweetness); soak in warm water for about 5 minutes, then chop. This helps it break down in the blender.
- optional — a cup of ice (for frosty texture)

Step 1
Before making the smoothie, prepare the almonds. Place in a small pan over low heat. Stir occasionally and watch for burning. Remove the nuts from heat once they start to turn a golden brown.

Now, place the nuts and the rest of the ingredients into the blender, adding frozen fruit and ice last.

Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency. Serve immediately or store some in fridge for later. Salud!
