Peppermint Brownie Smoothie

This deliciously decadent smoothie includes a sneaky serving of both cauliflower and zucchini —  and it’s a great way to incorporate veggies into a non-green smoothie.

If you crave a peppermint mocha on your way to work or after school drop-off, this is your jam. It’s filled with nutrients and fiber — and it’s sweet and chocolatey, without added sugar.

Serves 2.

Ingredients

  • 1 cup of organic, unsweetened almond milk
  • 1 cup of filtered water
  • ½ zucchini, chopped
  • 1 teaspoon coconut butter (coconut puree in a jar)
  • 2 tablespoons almond butter
  • 2 tablespoons cacao powder (unsweetened)
  • 1-2 medjool dates (pit removed), depending on how sweet you want the smoothie
  • ½ teaspoon peppermint extract
  • 1 banana, chopped and frozen. For additional sweetness, use 2 bananas.
  • ½ cup frozen cauliflower florets
  • OPTIONAL — ½ cup of ice, if you like a frosty texture
  • OPTIONAL — 1 tablespoon of unsweetened cacao nibs

Directions

  • Step 1

    Place ingredients into blender, adding frozen fruit and ice last.

  • Step 2

    Process until creamy and smooth.

  • Step 3

    Add water a quarter-cup at a time if you want a thinner consistency. Serve immediately or store some in fridge for later. Salud!
