Strawberry Superfood Smoothie

Berries are among the most powerful, nutrient-dense foods around, so I try to make sure I enjoy a serving every day. Smoothies, of course, are a great way to enjoy berries — they’re easy to make, portable, and delicious.

This strawberry smoothie gets an extra nutrient boost from the addition of ginger, which can reduce inflammation and support healthy digestion. I’ve also included beets, which have been shown to help reduce blood pressure. The smoothie also includes chia seed for extra fiber, and bee pollen (optional) for energy.

Serves 2.

Ingredients

  • 1 cup coconut milk (light or full fat, from the can)
  • 1 cup filtered water
  • 1 1/2 cups frozen strawberries
  • 1/2 cup frozen beet
  • 1 teaspoon grated fresh ginger root
  • 2 tablespoons chia seed
  • OPTIONAL: 1 drop of *edible* orange essential oil
  • OPTIONAL: 1 tablespoon of bee pollen for garnish

Directions

  • Step 1

    Place ingredients into high-speed blender, adding frozen fruit and ice last. Set aside the bee pollen (if using) for garnish.

  • Step 2

    Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency.

  • Step 3

    Serve immediately or store some in fridge for later. Garnish with the bee pollen, if using. Salud!
